Greek Chicken

Ingredients
1 cup plain yogurt 
2 Tbsp olive oil 
4 cloves garlic, minced 
½ Tbsp dried oregano 
1 medium lemon 
½ tsp salt 
freshly cracked pepper 
¼ bunch fresh parsley 
3½ to 4 lbs chicken pieces (preferably breasts cut into several portions)

Directions

To make the marinade, combine the yogurt, olive oil, minced garlic, oregano, salt, and some freshly cracked pepper in a bowl.  Add 1-2 tbsp of lemon juice plus some lemon zest.  Stir until well combined.  Add parsley. Add the chicken (I prefer breasts) to the marinade in a large Ziploc bag.
Cook in crock pot 6-8 hours until chicken is tender



Hummus

Ingredients

16 oz. can of chickpeas
4 tsp. lemon juice
2.5 tbsp. Tahini
2 tsp. crushed garlic
1/2 tsp. salt
2 tbsp. olive oil
Parsley to taste

Directions

Drain peas, set aside liquid
Combine other ingredients in blender
Add 1/4 c. liquid from peas
Blend 3-5 minutes
Top with olive oil, olives, minced garlic, parsley, etc.

Gyros with Cucumber Sauce

Ingredients

Sauce
6 tbsp. sour cream
1/2 tsp. garlic powder
1/2 tsp. lemon juice
1/2 tsp. dried dill
1 cucumber - peeled, seeded, chopped, drained)
Pinch of s&p

Gyros
1 lb. beef/lamb/chicken
2 tbsp. olive oil
1 medium tomato, chopped
1 can olives
1/2 small onion
Feta cheese
Shredded lettuce
Toasted pita bread

Directions

Sauce
Put cucumber in colander and sprinkle with salt
Let drain from 15-20 minutes, then squeeze into towel, remove as much juice as possible
Mix all ingredients and chill for 2 hours (blend if needed)

Meat
Brown in skillet with oil
