Ingredients
Sauce
2 tbsp. soy sauce
2 tbsp. brown sugar
1/2 tsp. rice wine vinegar
Chicken Mix
2 tbsp. olive oil
2 tbsp. sesame oil
2 chicken breasts, shredded or cut into very small pieces
8 oz. minced water chestnuts
1/2 c. minced mushrooms
1/2 c. mined onion
3 tsp. minced garlic
8-10 full lettuce leaves
Directions
Sauce:
Mix all ingredients
Chicken Mix
Combine oils and cook over high heat until is glistens (5 minutes)
Turn heat down to medium high
Add 1 tbsp. olive oil and wait 1 minute
Add garlic, onions, chestnuts, mushrooms, and sauce
Stir fry until mushrooms and cooked through (about 4 minutes)

Fried Rice
This should work with chicken, pork, shrimp, or tofu, or without any meat. Veggies can be changed to snow peas, water chestnuts, broccoli, etc.
2 c. white rice
4 c. water
2/3 c. chopped baby carrots
1/2 c. frozen peas
2 tbsp. vegetable oil
2 eggs
Soy sauce to taste
Sesame oil to taste
2 chicken breasts or 1 lb. shrimp
Directions
Pre-cook chicken or shrimp
Combine rice and water
Bring to boil
Reduce heat, cover, simmer 20 minutes
Boil carrots in water about 3-5 minutes
Drop peas in boiling water and drain
Heat to medium-high
Pour in oil, stir in veggies, cook 30 seconds (note: it's very important to stir continually from this point forward to keep the contents from burning to the pan - do not turn the heat down or everything will turn mushy)
Stir in pre-cooked meat if desired
Crack in eggs, stirring quickly to scramble
Stir in rice
Stir in soy sauce and toss
Drizzle with sesame oil and toss again
