Cheese Lover's Meatloaf

Ground beef and pork meatloaf mixed with Sharp Cheddar, Havarti, Fondita, and Parmesan cheeses. 

Ingredients

1/4 c grated Parmesan 
1/2 c Mozzarella – shredded 
1/2 c Jack or cheddar – shredded
1/4 c fresh chopped parsley leaves (about 1-ounce)
1 large medium onion, minced
2 eggs beaten
1 ¼ teaspoons salt
1/2 teaspoon ground black pepper
2 lb. Ground chuck 

Topping:
¼ c Mozzarella 
¼ c Parm 
¼ c Jack 

Directions

Preheat oven to 400 degrees F.
In a large bowl, mix bread crumbs, cheeses, parsley, and onion.
Add eggs, salt, pepper, beef
Bake @350, 50 minutes to 1 hour and let rest 10 minutes before slicing.
