Pear/Apple Cake/Muffins


Christie's recipe from her Aunt Francis, most likely using pears grown in the backyard. Imagine a denser cinnamon coffee cake, but with a smooth pear flavor. Great for breakfast or a midnight snack.


Ingredients:

2 c. sugar (divided in half)
3 c. chopped pears
3 eggs
1 c. oil
3 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
2 tsp. vanilla
1 c. nuts (optional)

Directions:

Pour 1c. sugar over pears for 2 hours to juice
Beat eggs and 1 c. sugar until very well blended
Sift all dry ingredients together
Blend in oil and other ingredients
Fold in sugared pears, vanilla, and (optional) nuts.
Bake @350 for 1 hour 15 minutes in bundt pan

For Muffins: 
Add 1.5-2 tsp cinnamon'
Mini-muffins - bake 15 min.
Large muffins - bake 20-23 min.

For Apple Muffins
2 tsp. cinnamon
1 tsp. allspice
Note: try to cut apples into bigger chunks than pears
