Garlic Dill Crusted Pork Loin

Delicious find from a cooking magazine - works in a crock pot too.

Ingredients

8 tbsp. fresh dill, divided 3/3/2
2 tbsp. yogurt
3 tsp. minced garlic
1 tsp. lemon
1/2 tsp. salt
1/2 tsp. pepper
1-2 lb. pork loin
1/4 c. bread crumbs
1 tbsp. olive oil

Directions

Heat over to 425
Combine 3 tbsp. dill, garlic, lemon juice, s&p
Spread over pork
Combine bread, 3 tbsp dill, oil
Pat over surface of pork
Bake 15 minutes on baking sheet
Reduce heat to 325
Bake 40-45 minutes
Let stand 10 minutes, sprinkle with remaining dill

For Crock Pot

Spread herb mix and breadcrumb mix over pork, place in crockpot with 1/8 c water, cook in crock-pot 4-6 hours on low. Garnish will dill.

Note

Large pieces of meat do NOT cook well in crock pot after being frozen, due to the accumulation of extra moisture that develops during freezing. This is a straight to crockpot meal, but it's not meant for freezing first.
