Ingredients
1 cup diced onion
1 cup chopped celery
1 cups chopped carrots
4 skinless chicken thighs (white meat is fine if preferred)
salt and pepper to taste
1 can tomato sauce
1/4 cup lime juice
1 tbsp minced chipotle
chiles
2 garlic cloves
1/4 cup cilantro
1 sliced avocados (optional)
Directions
Combine and freeze all ingredients except avacado
Cook in crock pot on low 7-8 hours, high 4-6 hours
