Not your typical potato salad - no mayonnaise or gunky sauce holding everything together. It's really light and more like a real salad than a potato or chicken salad.
Ingredients
Salad
1.5 lb. new potatoes, unpeeled
5 oz. green beans
1/2 c. think sliced carrot
2 c. lightly packed baby spinach
1/2 c. thin sliced radishes
1/2 c. think sliced green onion
Vinagrette
1/3 c. olive oil
2 tbsp. red wine vinegar
1 tsp. minced garlic
1 tsp. dijon mustard
1 tsp. thyme
1 tsp. salt
1/8 tsp. pepper
Directions
Boil potatoes in salted water 10 minutes
Add green beans & carrots to pot
Cook 5 minutes until potatoes are tender
Drain, cool under water
Whisk all vinaigrette ingredients until blended
When potatoes are cool, quarter or halve them
Mix all ingredients & toss with vinaigrette
